Healthy New Me + Fit for My King + Cranberry Muffins :)

I have a few extra pounds that I'd be happy to give away (no one seems to want them) but I guess the old fashioned way of taking care of your body will have to do :)  I love the thought of loving my body.  Although I'm not there yet, I am learning that my body has done some pretty cool things.  The coolest was letting God use me as a vessel to get Bronson here.  I'm learning that my body is my 'transportation' while I'm here on earth.  Housing all the many parts and pieces that make up Leona and also being a temple for the Holy Spirit (or HS as I like to call him).

I found a book by Sheri Rose Shepherd a few years ago and went through the thirty day process that she suggests.  It was right before I got pregnant so really the weight loss from that first time kinda became null and void (you can read about it here)!  But this time?  This time I'm hoping it will stick.  I have to start first, but one thing at a time people.  I wanted to start this week but I really need to plan better and shop for foods that fit my goal.  The main thing is no sugar.  That doesn't sound too bad, right?  I can go thirty days without eating chocolate and ice cream.  Little did I know that EVERYTHING has sugar.   EVERYTHING.  To get myself in a healthy mood I baked some muffins last weekend in preparation.  They are delicious, and I don't know how that can be with no sugar.  So I guess I may have been a little dramatic when I said EVERYTHING.  Sheri's book is great in that it gives so many nutritious recipes to make for breakfast, lunch and dinner.

With all these resources in hand I plan to start this Sunday the 27th.  Do you want to join me??  There are a few more details that I will post tomorrow but to prepare it's no sugar and no white flour.  And I'll post how I'm doing along the way (nervous feeling now that I just 'typed' that out loud!).  I've started a Pinterest board with links to recipes that will hopefully be useful.  Let me know if you are with me and I'll add you to the board so you can add pins :)

Berry Nut Muffins - from Fit for My King by Sheri Rose Shepherd
 
2 cups brown rice flower (Pamela's baking & Pancake Mix is what I used)
1 cup birch sugar or honey (I used honey)
2 tsp baking powder
1/4 tsp sea salt
2 large eggs, room temperature
1 cup soy or almond milk, room temperature
4 Tbl grape seed oil
1/2 cup chopped, dried cranberries or dried blueberries (I used cranberries)
1/2 cup finely chopped pecans or walnuts (being a rebel I used walnuts and almonds)
 

Preheat oven to 400.  Coat a muffin pan with nonstick spray.  Sift the flour, sugar, baking powder and salt together in large bowl (since I used honey instead of birch sugar I left that out).  Whisk together the eggs, milk and oil (here is where I added the honey to the liquid ingredients).  If the eggs and milk are cold, the oil may solidify.  Make a well in the center of the dry ingredients and add the liquid all at once.  Stir with a wooden spoon until the  dry ingredients are just moistened.  Fold in the berries and nuts.  The batter will be a little lumpy; do not over mix.  Fill the tins two-thirds full, being careful not to drip batter on the edge of the tins where it will burn and cause sticking.  Bake until golden brown and set in the center, approximately 12 to 15 minutes.  The muffins are done when a small knife inserted in the center of a muffin comes out dry.  Cool for 5 minutes before removing from the pan.  Enjoy!!  Find more recipes like this in Fit for My King.
