My mom, my fiancé, and one of my friends are concerned about me; they've all noticed my addiction to menu items with the word "salad" in them, namely chicken, tuna, egg, and potato salad. Those aforementioned three people have eaten with me so often that they can call my order sometimes before I even see one of those "salads" on the menu.

Now that my secret is out, I can share my obsession with you. I recently found a recipe on MyFitnessPal for Buffalo Chicken Salad. That recipe got me thinking that I could change up my typical homemade tuna salad with eggs and mayonnaise, so I bought hot sauce on my next grocery run.
This is probably a good time for me to add that I also like hot stuff, so you may want to adjust the following recipe based on your spiciness preference.
First, dump 12.8 oz tuna and 2 stalks of celery (finely chopped) into a medium-sized bowl. Slosh in 5 tablespoons hot sauce of your choice, and stir. You'll probably want to taste the salad before you go any further to see if it's spicy enough for you. (Conversely, if you're not a fan of spice, stir after adding each tablespoon or half tablespoon and taste). Once the tuna and celery are well coated, pour in 1 1/2 tablespoons lemon juice. Stir well again. Lastly, add a ~generous~ dash of paprika, followed by a dash of salt and a dash of pepper. Stir one last time.
If you're ready to dive in, I suggest toasting an English muffin and laying a slice of pepper jack cheese on it before adding the tuna and other desired fixings. It's that easy to "spice" things up a bit in the kitchen!

Spicy Tuna Salad
12.8 oz tuna
2 stalks celery, finely chopped
5 T hot sauce
1 1/2 T lemon juice
pepper jack cheese
English muffins, toasted
Dump tuna and celery into a medium-sized bowl. Top with hot sauce. Stir. Add lemon juice. Stir. Add paprika (a generous dash), salt, and pepper. Stir again. Serve on English muffins with cheese and desired fixings. Makes about 6 servings of 1/4 cup.
